Tofu (or Chicken) & Broccoli Stir Fry with Peanut Sauce!

Ingredients:

~ 2 teaspoons canola oil (2 healthy fats)

~ 30 oz super-firm tofu*, cut into ½” cubes (2 leaners)

(or 18 ounces chicken, cut into bite-sized pieces)

~ 2 cloves garlic (2 condiments)

~ 2 tsp. minced ginger (1 condiment)

~ 2 3/4 cups (8.53 oz) fresh broccoli, chopped (5 1/2 greens)

~ 1/4 cup (.88 oz) chopped scallions (1/2 green)

~ 3 Tbsp. hot water

~ 3 Tbsp. PB2 (1 1/2 optional snack)

~ 3 tsp. low sodium soy sauce (1 condiment)

~ 2 Tbsp. rice vinegar (1/2 condiment)

~ 1/4 tsp red pepper flakes (1/2 condiment)

~ 1 tsp sesame seeds (1 condiment)

Directions:

1. Coat a nonstick pan with 1 teaspoon of oil. Sauté broccoli on medium heat until tender. Set aside in bowl.

2. Add another teaspoon of oil to the same pan and cook the garlic and ginger for two minutes or until golden in color. Add tofu/chicken and sauté on medium heat until cooked through.

3. While the tofu/chicken is cooking, make the sauce by adding the hot water to the PB2. Whisk until well mixed and then add the stir in the remaining ingredients.

4. Add the broccoli and the sauce back into the pan. Toss until thoroughly mixed.

Makes 2 servings

Per serving: 1 Leaner protein, 3 greens, 1 fat, 3 condiments, .75 optional snack
