Sausage Spaghetti Casserole

Ingredients

4 cups cooked spaghetti squash

8 chicken sausage links cut into bite size pieces

3/4 cup Bertiolla light Alfredo

3 cups fresh spinach

1/2 cup red peppers chopped

1/2 cup sliced mushrooms

4 tablespoons fresh grated Parmesan for on top of each serving.

Directions

Spray non-stick spray in a large frying pan.

Add red peppers and mushrooms.

Sauté' for 3 minutes then add Alfredo sauce and spaghetti squash.

Gently mix on low heat and add chicken sausage.

Add fresh spinach at the very end.

Stir just until the spinach begins to wilt. (This dish is made very quickly).

Divide onto 4 plates/Tupperware and add 1 tablespoon fresh parmesan over each portion.
