One-Pan Anti-Inflammatory Beef & Veggie Skillet

This anti-inflammatory beef & veggie skillet is quick, easy, and best of all, only requires one pan! 

The key to maintaining a nutritious diet is making sure that preparing healthy meals doesn’t take up any more time than necessary. This meal packs in the nutrients, and is ready in just a few minutes, with no dishes to clean up at the end. Eating healthy has never been easier!

Ingredients

1 tablespoon of avocado or olive oil

2 large carrots, peeled and finely chopped

1 large crown of broccoli, chopped

6 radishes, chopped

1 pound of grass-fed ground beef

Sea salt to taste

2 teaspoons of ground ginger

2 medium zucchinis, chopped

1 large yellow squash, chopped

Instructions

In a large skillet, bring your oil up to medium heat. Stir in the chopped broccoli, carrots, and radishes and mix to combine. Cover the skillet, stirring occasionally, for approximately 5 minutes or until the vegetables soften.

Push all of the vegetables over to one side of the skillet, and add the ground beef to the other side. Gently press the ground beef down into an even layer so that it coats the entire half of the skillet. Season with sea salt and ginger, and cook for approximately 2 minutes. Flip the beef over to the other side and continue cooking until browned. Once browned on both sides, gently break up the beef, and mix it into the vegetables until combined.

Add in the zucchini and yellow squash and mix well. Cook all ingredients, stirring occasionally, for approximately 5 minutes, or until the meat is cooked through and the vegetables are soft.

You may add more seasoning according to your taste, remove from heat, and serve immediately!
